We've still got quite a bit left on our to-do list before I hare off for another few months to wrap up my NEWTs, gentlemen, so let's review.
Today, we're narrowing down the list of sites, hopefully finalising by the end of the business day. I'll meet you at the first site in an hour.
Sloper, you need to read up on our three lines, and start ordering supplies so you can develop product and send it to me for testing and refinement. Remember, there'll most likely be delays with customs for the off-season fruit, hops, and so on, so order sooner rather than later, and more than you think you'll need to experiment around. We'll be visiting farms on Friday and Saturday to see if we can't locally source barley, wheat, potatoes, and sugar beets. The sooner we pin that down, the better. Food for labour is also in the budget, and you'll be in charge of that too.
Towler, you need to be sourcing labour for our renovations. Remember what we talked about, they need to be able to transition to production and kitchen work down the line. One family and one or two muggleborn beyond that should set us up, and if you need more heavy lifting for the first phase, you'll need to look into contract work. You'll also need to prepare temporary quarters for labour, sort out security for all the property, and come up with a renovation plan and timeline.
You'll both need to coordinate extensively regarding what you'll need for brewing, bottling, and kitchen space and materials, and I'll need to approve any additional large purchases beyond my initial estimates.
I know this is ambitious, but I think this has real promise, and has a lot of potential for expansion once we get our footing. I'm so pleased you're both fully committed and on board for the long haul. Thank you for taking a chance with me.
